Want to try some vegetarian menu items? Look at what’s new–seitan!

Seitan, which is derived from the protein portion of wheat, is easily substituted for meat in so many dishes that many who have tried it are meat-eaters but are loving this vegan addition to stir fry.

A serving of seitan (3 ounces) has 18 grams of protein, which compares closely to 3 ounces of chicken (21 grams of protein).The same amount of tofu has 10 grams of protein.

Where to find it in the dining hall?  Ask for it at the stir fry.  You may think you’re eating poultry or beef, but the vegetable-based seasonings are undescribably good.
